For the Shrimp:
- 1 lb large shrimp peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs whisked
- 1 cup panko breadcrumbs
- Oil for frying
For the Boom Boom Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha adjust to taste
- 1 teaspoon garlic powder
- 1 teaspoon honey
- 1 teaspoon lime juice optional
Prepare the Shrimp: Pat shrimp dry with paper towels. In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, and black pepper. In another bowl, whisk the eggs. Place panko breadcrumbs in a third bowl.
Coat the Shrimp: Dredge shrimp in the flour mixture, dip in egg wash, and coat with panko breadcrumbs.
Fry the Shrimp: Heat oil to 350°F (175°C) in a deep skillet. Fry shrimp in batches for 2-3 minutes until golden and crispy. Drain on a paper towel-lined plate.
Make the Boom Boom Sauce: In a bowl, mix mayonnaise, sweet chili sauce, sriracha, garlic powder, honey, and lime juice until smooth.
Toss and Serve: Coat the fried shrimp in Boom Boom Sauce. Serve immediately with extra sauce and garnished with green onions or sesame seeds.
